The Kentucky Coal Museum, operated and staffed by Southeast Kentucky Community and
Technical College, recently hosted its Recollections Program with a focus and tribute
to country cooking. Shirley Dodd and Linda Halcomb were highlighted as they discussed
the history of the region s favorite foods and its cooking styles. Prior to their
presentation, a meal was served consisting of pinto beans, fried potatoes, mixed greens,
kraut and wieners and garden fresh vegetables. Even though designed for senior citizens,
the program welcomes all.
